  • "Don Papa rum comes from the island of Négros in the Philippines where it is made from local molasses, renowned for its sweetness and richness.
  • For those who don't know, although the Philippines is today one of the 10 largest sugar cane producing countries in the world, rum production only began there 150 years ago and was temporarily interrupted during prohibition.
  • Don Papa rum is produced from the best canes in the archipelago.
  • Don Papa 10 year old rum is a limited edition from a blend of old rums aged more than 10 years.
  • The distillation of this rum is carried out in columns from local molasses. During this long rest in reburned American oak barrels, the rum is enriched with notes of oak and vanilla.
  • The 10 years required for this rum to rest allow a greater proportion of the angels to escape as the phenomenon of evaporation in the Philippines is one of the most important in the world (particularly hot and humid climate). This tropical aging without topping (that is to say without regularly filling the barrels to keep them at their highest level) results in a nectar whose color is deeply colored and concentrated.
  • The nose of this hors d'age reveals with intensity and power the aromas of dried fruits (currants) and cocoa.
  • The palate, for its part, expresses a wide range of aromas. Dominated by velvety, it is enhanced by fine notes of spices and oak which balance the whole."
