- "Château d'Esclans is a 267 hectare wine estate located in La Motte, between the Gorges de Pennafort and Fréjus in the Var.
- In its cellars, the oldest in the region, a medieval castle originally stood, the remains of which can still be seen. Since the Gallic era, almost 2000 years ago, an observation post on the site of the current castle was erected in order to monitor and prevent any possible maritime invasions in the Gulf of Fréjus.
- Occupied by the German army during the Second World War, it was then successively bought by several owners until it was taken over in 2006 by Sacha Lichine.
- The architecture of the Castle is inspired by the style of the villas of Tuscany, an emblematic region of central Italy. The Sauveur brothers Louis and François Alexandre Ranque then became owners of this estate then called “Terre d’Esclans”. Between 1875 and 2006, the estate passed through the hands of several owners before Sacha Lichine.
- At the end of 2019, the LVMH Group acquired 55% of the estate. Through this alliance, Sacha Lichine and the French luxury group are opening a new chapter in the history of the property aimed at continuing the development beyond the borders of this range of premium rosés.
- At Château d’Esclans, the harvest takes place in September, from dawn until midday, before the heat peaks. The grapes are selected ripe, harvested and carefully placed in small crates. The grapes intended for Whispering Angel are harvested mechanically at night, again to escape the heat.
- Once they arrive in the cellars, the grapes are manually sorted. All the berries used for vinification are perfectly destemmed and correspond to the strict specifications established by the winemaker.
- Three different juices are obtained: free-run juice, the most important, heart of press and end of press. So many operations determining the quality of the final product which are the subject of scrupulously detailed and controlled programming.
- Following pressing, the winemaker directs the juices according to their quality; some will be fermented in vats, others in barrels. The different qualities are linked to the maceration time. The winemaker always looks for the least tannic juices to produce tender wines that meet demanding criteria. The most important: the pale color, essential to their rosés.
- Round and fatty mouthfeel, supported by a beautiful acidity which gives depth to the wine.
- Fine and elegant aromatic structure. A smooth and round finish, with very little bitterness."
