- "The Domaine des Sarrins takes its name from the contraction of the word "Sarrasins". The latter occupied for centuries the Maures massif from where they launched raids towards the hinterland. In the 11th century, during one of These lootings, the resistance having been organized, a Sarrazin leader was wounded in Draguignan. In trying to reach the Massif des Maures he succumbed at this place where a small tower stood. He was, it is said, buried there covered with his golden armor...
- Over the centuries, near this Sarrazin tower which became a country bastide, endowed with a precious spring, an estate was built, with numerous trades: from olive groves to livestock breeding, including various crops including that of silkworm and of course…. of the vine.
- In 1995, the Paillard family bought it, and through patient work, over the years, breathed new life into it.
- Today, Château des Sarrins is owned by the Pélépol family, who purchased the property in 2004 and began cultivating the vines organically.
- The grapes, harvested by hand, are destemmed before being placed in temperature-controlled stainless steel vats.
- Aging lasts 24 months in these French oak barrels.
