"A big name in Provence wine, a pioneering estate. Established in Cabasse in the Center-Var for more than two centuries, the Gavoty family has done a lot for the Provençal vineyard. They introduced Rolle, which is a delicacy for whites from here and contributed to the recognition of its rosé wines.
  
Philémon Gavoty acquired the property in 1806.
  
8 generations have succeeded one another. André Gavoty, a literary journalist at the Revue Des Deux Mondes, then in charge, entrusted management of the estate in 1960 to his nephew Pierre (1925-2006).
  
Vignification : Picked separately, the red grape varieties underwent maceration for 20 days in vats, at 26 and 27° C, depending on the grape variety.
  
Nose still closed on black fruits and garrigue.
  
The tannins begin to soften; spices, black and ripe olives manifest themselves but will be more generous within 2 years to then reach wilder notes, where the terroir will assert itself."
