- "A great name in the wine-growing region of Provence, a pioneering estate. Based in Cabasse in the Centre-Var for over two centuries, the Gavoty family has done a lot for the Provençal vineyard. They introduced the Rolle which makes the local whites so delicious and contributed to the recognition of its rosé wines.
- Philémon Gavoty acquired the property in 1806.
- 8 generations have followed one another. André Gavoty, a literary journalist at the Revue Des Deux Mondes, who was then in charge, entrusted the management of the estate in 1960 to his nephew Pierre (1925-2006).
- Vignification: Harvested, crushed, destemmed, the grapes underwent maceration in vats for around 3 hours. After bleeding, the grapes are pressed the same day.
- After vinification, a blend is made from the more delicate bleeding vats to the first presses, which are more structural.
- A nose marked by fleshy fruits white.
- On the palate, we clearly find this palette of fruits which reveals a beautiful balance playing on a gourmet roundness and a nice freshness.
- Fruits and spices dominate."
