- "With more than 70 appellations of Burgundy wines, Domaine Vincent Girardin has built a reputation for excellence. Created in 1980 in Santenay, the estate has gradually expanded across the most beautiful appellations of the Côte de Beaune. Now based in Meursault, it has developed a significant activity as a wine merchant and grower. This allows it to offer no fewer than seven Grands Crus and around thirty Premiers Crus of Burgundy.
- Domaine Vincent Girardin has 30 hectares of vines in the Côte de Beaune. These Chardonnay and Pinot Noir vines are spread across nine villages. The historic heart of the estate is located in Santenay and Meursault. Its vineyard also extends to Puligny-Montrachet, Chassagne-Montrachet, Saint-Aubin, Volnay and Pommard. In the north of the Côte de Beaune, the estate has vines in Savigny-Lès-Beaune and Aloxe-Corton.
- Manual harvest, sorting on vines then sorting on a sorting table (depending on certain years, use of an optical sorter) at the vat room.
- The grapes after a light crushing and destemming are put in stainless steel vats. A small portion of the whole harvest can be incorporated depending on the state of the raw material.
- After pneumatic pressing, the wines are put in barrels (about 30% new wood) where the aging takes place. This lasted 15 months, during which time the malolactic fermentation took place. One month before bottling, the wine from the different barrels is blended in vats. Some changes to the overall technique can be made depending on the vintage. Bottling is done according to the lunar calendar.
- The bouquet is composed of sour cherry, redcurrant, blackcurrant bud and undergrowth.
- The acidity carries it, its tannins remain discreet, the body soon appears, firm and elegant, possessing all the flesh it needs to impress."
